Potato Casserole


Ingredients

3 potatoes (cut in thin rounds as shown in the image)
1 finely chopped onion
1 finely chopped capsicum
1/2 cup american sweet corn (boiled)
1 tbs butter
1 cup milk
1/2 cup fresh cream
1 tbs white flour
1/4 cup mozzarella cheese
Salt and Pepper



How to cook

1. Boil the potatoes, till they are tender. Make sure they are not mushy or over cooked.


2. Take a microwave safe dish and stack the potatoes adding salt and pepper on the potatoes.

3. In a bowl mix corn, onions, capsicums and add salt and pepper to it.


4. For cooking the white sauce, In a pan add Butter. Once the butter melts add white flour and saute

5. Add milk. Once the
milk thickens add fresh cream to the pan.
6. Add salt and pepper.

7. Add the corn, onions and capsicum mixture over the potatoes.

8. Pour sauce over it.

9. Cover the dish with mozzarella cheese and bake at 220 degree centigrade for about 25 mins or till the cheese melts
and turns slightly brownish on sides.

MEXICAN CORN SOUP

INGREDIENTS:

1 AMERICAN CORN COB
1/4 CUP CREAM
1 CUBE VEGETABLE STOCK
4 CUPS WATER
2 TBSP OLIVE OIL
1 TBSP GARLIC GINGER PASTE
SALT AND PEPPER TO TASTE

RECIPE:

1)PUT THE CORN COB WITH ITS COVERING IN A MICROWAVE FOR 7 TO 8 MINS.
2)AFTER THE CORN IS COOKED, PEEL ITS COVERING AND WITH THE HELP OF A KNIFE SCRAPE THE CORN OUT.
3)IN A PAN BOIL THE WATER ALONG WITH STOCK CUBE.
4)ONCE THE STOCK IS READY, LET IT COOL AND THEN ADD 3/4 TH CORN TO IT AND GRIND IT TO A THICK PASTE.
5)TRANSFER THIS PASTE IN TO A BOWL THROUGH A SIEVE. PUSH AS MUCH STOCK OUT OF THE PASTE AS POSSIBLE.
6)TAKE A PAN, ADD OLIVE OIL AND GARLIC GINGER PASTE TO IT. STIR IT TILL LIGHTLY BROWN.
7)ADD THE CORN STOCK TO IT ALONG WITH CREAM AND REMAINING 1/4 CORN. LET IT BOIL. ADD SALT AND PEPPER.
8)SERVE HOT WITH TORTILLA CHIPS.

PITA SANDWICH

INGREDIENTS:

4 PITA BREADS
1 CUP HUMMUS
1 FINELY CHOPPED TOMATO
1 FINELY CHOPPED ONION
1 TBSP BALSAMIC VINEGAR (IF UNABLE USE LEMON JUICE)
1 TBSP OLIVE OIL
1/2 TSP SALT AND RED CHILI
1 TBSP PARSLEY OR CORIANDER

RECIPE:

1) IN A BOWL ADD ALL INGREDIENTS OTHER THAN PITA AND HUMMUS AND MIX WELL.
2)WARM THE PITA IN A PAN.
3) IN TO THE PITA, SPREAD SOME HUMMUS.
4) ON TOP OF THE HUMMUS PUT THE TOMATO ONION MIX
5)SERVE WITH FRENCH FRIES.

NOTE: BROWN BREAD OR ANY OTHER BREAD CAN BE USED IN PLACE OF PITA BREAD.

PITA BREAD


INGREDIENTS:

1 3/4 TSP DRIED YEAST
2 CUPS FLOUR
1 1/2 CUPS WHOLE WHEAT FLOUR
1 1/2 CUP LUKE WARM WATER
1 TBSP SUGAR
1 TBSP OLIVE OIL
SALT TO TASTE

RECIPE:

1) MIX TOGETHER 1/2 CUP LUKE WARM WATER AND SUGAR TILL SUGAR IS DISSOLVED.
2) SPRINKLE YEAST ON TOP
3)MIX THE YEAST INTO THE SUGAR WATER MIXTURE. COVER AND KEEP ASIDE TILL THE YEAST IS DISSOLVED.
4) IN A LARGE BOWL TAKE THE FLOUR, SALT, OLIVE OIL, YEAST AND WATER KNEAD AND FORM A FIRM DOUGH.
5) COVER AND LEAVE IT TO RISE FOR ABOUT 40 MINS
6)AFTER THE DOUGH HAS RISEN KNEAD IT FOR A MINUTE OR 2 AND FORM SMALL BALLS OUT OF THE DOUGH
7)ON A WELL FLOURED SURFACE, PLACE THE DOUGH BALL AND FLATTEN IT WITH THE HELP OF A ROLLING PIN .
8) HEAT A PAN OR GRIDDLE. PLACE THE ROLLED PITA ON IT. COOK FOR 15 TO 20 SECONDS BEFORE TURNING THE BREAD OVER. COOK IT FOR A MINUTE.
9)TURN THE PITA AGAIN AND USE A KITCHEN CLOTH TO PRESS ON THOSE AREAS WHERE BUBBLES HAVE FORMED TO PUSH AIR INTO THE FLAT AREAS. COOK UNTIL PITA BALLOONS.
10)REMOVE PITA AND SERVE WITH HUMMUS.



VEGETABLE PIZZA


HOME MADE PIZZA BASE

INGREDIENTS:

2 CUPS FLOUR
2 TBSP OLIVE OIL
1 TBSP SALT
1/4 TBSP SUGAR
1 TBSP DRIED YEAST
WATER

PIZZA TOPPING

INGREDIENTS:

1 ONION (CHOPPED)
1 GREEN PEPPER (CHOPPED)
1 BOILED POTATO (CUT INTO THIN ROUNDS)
1 CUP MOZZARELLA CHEESE(GRATED)
1 CUP CHEESE SPREAD

PIZZA SAUCE

INGREDIENTS:

3 TOMATOES (PUREED)
SALT AND CHILI
1 TBSP OLIVE OIL
1 TBSP GARLIC (CRUSHED)
2 TBSP TOMATO KETCHUP




RECIPE:

1) MIX TOGETHER 1/2 CUP LUKE WARM WATER AND SUGAR TILL SUGAR IS DISSOLVED.
2) SPRINKLE YEAST ON TOP
3)MIX THE YEAST INTO THE SUGAR WATER MIXTURE. COVER AND KEEP ASIDE TILL THE YEAST IS DISSOLVED.
4) IN A LARGE BOWL TAKE THE FLOUR, SALT, OLIVE OIL, YEAST AND WATER KNEAD AND FORM A FIRM DOUGH.
5) COVER AND LEAVE IT TO RISE FOR ABOUT 40 MINS

8) COOK ONE SIDE OF THE FLATTENED BASE IN A CONVECTION OVEN AT 180 DEGREES CENTIGRADE FOR ABOUT 5 MINS.
9) IN A PAN TAKE OLIVE OIL AND ADD GARLIC TO IT
10) ADD TOMATOES, KETCHUP, SALT AND RED CHILI LET IT COOK TILL OIL SEPARATES
11) ON THE COOKED SIDE OF THE BASE PUT SOME CHEESE SPREAD AND TOP IT WITH THE TOMATO SAUCE
12) PUT MOZZARELLA ON TOP THE SAUCE ALONG WITH ONIONS AND BELL PEPPERS
13) IN A PAN SAUTE THE CUT POTATOES WITH OLIVE OIL, GARLIC AND OREGANO AND PUT THE POTATOES ON TOP OF THE PIZZA (OPTIONAL)
14) PUT THE PIZZA IN THE OVEN AT 180 DEGREE CENTIGRADE TILL BROWNED.





HUMMUS RECIPE


THIS IS THE RECIPE OF A LEBANESE DIP CALLED HUMMUS. IT GOES VERY WELL WITH PITA BREAD.

INGREDIENTS:
2 CUPS CHICKPEAS (KABULI CHANA)
2 TBSP EXTRA VIRGIN OLIVE OIL
2 TBSP SESAME SEEDS
1/2 TBSP CUMIN POWDER
3 TBSP LEMON JUICE
1 TBSP GARLIC PASTE
SALT TO TASTE
WATER(AS DESIRED)


RECIPE:

1) SOAK CHICKPEAS OVERNIGHT AND AFTER THAT BOIL THEM
2) IN A GRINDER GRIND OLIVE OIL WITH SESAME SEEDS AND GARLIC
3) TO THIS ADD REST OF THE INGREDIENTS AND GRIND IT TO A THICK PASTE WITH THE HELP OF WATER.
4) SERVE WITH PITA BREAD OR SALAD.
